Fresh Mex is one of the hottest and fastest growing categories of 'fast casual' food in the world. Inspired by the fresh flavours of the Mexican Baja Coast, Fresh Mex concepts have experienced tremendous growth across the United States over the past 6 years.

Australians are embracing these exciting flavour sensations and Salsa's is leading the charge! It's all about offering an amazing range of freshly prepared burritos, nachos and tacos, combined with tangy salsas, fresh guacamole, lime & herb seasonings and amazing sauces.

Meet Lawrence, El Big Bosso!

When Lawrence was only just a little tyke, he became interested in cooking and spent many hours with his mum in their big Italian kitchen, eventually learning and experimenting with his own recipes. Growing up in Australia in an Italian family during the 70s and 80s was definitely not considered in vogue (see photos to prove this point) however Lawrence had a happy life, especially when he purchased his Torana.

"Umm so that's great, what has Italian got to do with Mexican!?" we hear you ask. Well, Lawrence's family took a road trip to America where he noticed everyone who was anyone was holding either a burrito or a taco in their hand. Mexican food was in. Once Lawrence took his first bite of burrito with his scrawny teenage hands, there was no turning back. When back in Melbourne, he excitedly threw aside his mothers cannelloni from the kitchen bench and started to bake his own nachos in the oven. In 1992 his addiction to nachos led him to open up his first Mexican takeaway shop - El Taquito. With a delicious range of burritos, tacos and nachos, El Taquito won over a lot of peoples hearts, however Lawrence knew he could do better (and his sister told him so!).

In 2003, El Taquito gave way to a new brand and new approach to Fresh Mexican - a brand that would retain all of the good stuff that made El Taquito great, but with a fresher and more contemporary image. Along came Salsa's...

It was a hit from the very first day of opening in November 2004 at Northland. "It was amazing!" said Lawrence when we pinned him down for a chat in his hammock underneath a palm tree that was idly drifting in the gentle Salsarito breeze. "Customers loved the new flavours, and really responded well to a fresher, healthier approach to Mexican food. The years we took to build and perfect Salsas has been worth it. You can see it in our customers' faces!"

So there you go. Thats how it all started. But our adventure has only just begun - we're hoping to make Salsas Australia's biggest and best Fresh Mex shop. Because, goddammit, everyone deserves to have a fresh and amazingly tasty burrito within arms reach!

What's a burrito got to do with a smoothie?!

A lot, actually! Boost Juice Bars (B.I.G. Investment Group) brought a majority stake of Salsa's in October 2007. In case you have been living under a rock for the past decade, Boost Juice is an amazing retail phenomenon with a growth platform of an average of 23 stores a year for five years.

With a group turnover exceeding $AUD85,000,000 per annum, Boost Juice is the largest juice and smoothie bar in the Southern Hemisphere and is in more countries than any other juice bar in the world.

But back to reality... Boost Juice had been on the search for a strong existing food brand. In 2006, Salsa's was seen as a business that had fantastic products (we have a small ego problem), great speed of service and well established systems. Not only that, there was (and still is!) a very strong cultural fit between the founders of both brands.

With its partnership with Boost Juice, Salsa's has access to Boost's amazing growth platform and support services. It's everyone's aim to make Salsa's the leading fresh mex brand in Australia. And with Boost's help, that dream is already becoming a reality!
